Fennel
Fennel has a distinctive anise-like flavour and crisp texture. The delicate, liquorice-like notes of fennel make it a unique addition to summer salads and grills. We’ve paired it with hake and courgette as part of a delicious main dish, perfect for summer menus. -
Beetroot
Beetroot is a vibrant vegetable that reaches its peak during the summer months. Whether roasted, boiled, pickled, or grated raw, beetroot adds a unique and nutritious element to summer salads, dips and side dishes. We’ve created a roasted & pickled mixed beetroot salad with whipped goats cheese made with a variety of different beets. -
Tenderstem broccoli
This versatile ingredient that can be steamed, stir-fried, grilled, or even eaten raw, making it a versatile addition to a wide range of summer dishes. Whether featured in vibrant salads, flavourful stir-fries, or served as a nutritious side dish, tenderstem broccoli adds both visual appeal and nutritional value to meals. -
Tomatoes
Cooking with tomatoes on summer menus offers a vibrant and versatile ingredient that captures the essence of the season's freshness and abundance. Tomatoes, with their juicy texture, rich flavour, and bright and varying colours, are a staple in summer cuisine and can be featured in a variety of dishes to add depth, acidity, and a burst of natural sweetness. -
Courgette
These versatile green and yellow vegetables thrive in the sun and can be harvested for long periods across the summer months, producing an abundance of fresh, tender fruits that are both nutritious and delicious. Their mild, slightly sweet flavour makes them a favourite in a variety of dishes, from fresh salads and grilled skewers to flavourful stir-fries and zesty pasta sauces. -
Strawberries
Is there anything more symbolic of the summer on British menus than the strawberry? These beautiful, red, sweet fruits are an ideal ingredient to use on your menus. In desserts, strawberries can be featured in traditional classics like strawberry shortcake, Eton mess, or strawberry cheesecakes, showcasing their natural sweetness and vibrant red hue. -
Radish
Radishes, with their peppery kick and crunchy texture, are a versatile vegetable that can be featured in a variety of dishes to add a burst of freshness and visual appeal. In salads, such as our Feta and pickled melon salad with a honey chilli and sesame dressing the radishes are simply halved. But they can also be thinly sliced. This also works well as a finishing touch to main dishes, adding that final additional flavour to the dish. -
Haddock
Known for its firm texture and mild, slightly sweet flavour, haddock is well-suited to a range of cooking methods popular during the summer, such as grilling, smoking, and pan-searing. Grilled haddock fillets, seasoned with fresh herbs and citrus, make a delicious and light main course that pairs beautifully with summer salads and grilled vegetables. -
Hake
Hake has a delicate texture and mild, slightly sweet flavour that lends itself beautifully to summer menus. It can be grilled to perfection and served with a zesty herb salsa and medley of summer vegetables, pan fried or even oven roasted like in our Miso glazed hake recipe served with a fennel, courgette & dill salad. -
Monkfish
Monkfish, with its firm, meaty texture and sweet, delicate flavour, is a versatile fish that lends itself beautifully to a variety of cooking methods popular in summer cuisine, such as grilling, roasting, and pan-searing. Grilled monkfish skewers, marinated in a vibrant herb and citrus marinade, make a delicious starter or main course that pairs well with seasonal vegetables and salads.
