Spring greens
Spring greens are the first cabbages to come through in spring and are a fantastic addition to spring menus. They are perfect as sides to roasts, but also work perfectly in stir frys and pies as well.-
Asparagus
Asparagus starts to come into season in April here in the UK and is perfect for menus in spring and the early part of summer. It’s fantastic as a seasonal side or as an ingredient in soups and pies. Check out our recipe, roast Jersey royals, asparagus and béarnaise salad.

Rhubarb
Bright pink stalks of rhubarb really do mark the change of season on menus and provide a little hope for sunnier and brighter days to come, even if the British weather hasn’t quite caught up with the season yet! -
Cabbage
White and red cabbages are often available all year round and you'll still be able to get British savoy cabbage in the early part of spring and all work well in spring food such as pies, soups, stir frys and as sides. Why not try our pork belly, bacon, cabbage, apples and mash recipe? -
Baby potatoes
Baby potatoes are available all year round, however we see them feature more on recipes as we move into spring as they work perfectly with fish, chicken and seasonal greens. -
Lamb
Lamb is the meat of choice for menus in the lead up to and over Easter. And there are so many ways to incorporate it into your menus, from your traditional lamb roasts, or premiumising your menu with a lamb rack dish. -
Chicken
Although chicken is popular all year roud, as a leaner meat than most it is ideal for fresh spring recipes that incorporate lots of greens. In spring we see lot more chicken stews and pies on menus as people want less heavy red meat dishes that are more synominous with the winter months. -
Trout
Trout fishing begins in April but you can actually get ChalkStream trout all year round. Something like this ChalkStream trout, celeriac gnocchi and picked shallot recipe would work really well as a springtime menu offering. -
Salmon
Salmon is popular all year round on menus, but is especially suited to spring menus as it is so light and goes so well with lighter fresh ingredients that you see on spring menus. -
Crab
For fishmongers the crab season begins in April and this shows up on menus with more dishes popping up with crab in them. Crab is perfect incorporated into starters and is perfetly paired with prawns in linguini dishes.
