Butternut squash | 1 |
Large parsnips | 2 |
Everyday Favourites vegetable oil | drizzle |
Everyday Favourites runny honey | drizzle |
Kale | 100g |
Butter | dollop |

- Preheat oven to 180 degrees.
- Cut beetroot, carrots, butternut squash and parsnips into roughly equal sized chunks.
- Drizzle with honey and oil and season to taste. Cook in preheated oven for 20 min.
- On a separate tray, place the frozen scampi and cook as per instructions for 18 min.
- Serve with steamed kale and a dollop of butter.
