Whitby Seafoods gluten free wholetail scampi | 600g |
Everyday Favourites mayonnaise | 125g |
Everyday Favourites Cajun spice | 1 tsp |
Romaine lettuce, finely shredded | 1 |
Gluten free baguettes, warmed | 4 |
Large vine tomatoes, sliced thinly | 2 |
cucumber, sliced | ½ |

- Cook the scampi as directed on the back of pack. The scampi will be crisp and golden when cooked.
- Meanwhile whisk the mayonnaise in a small bowl with the Cajun spice and 1 tbsp of cold water until smooth.
- To assemble the Po’boys, divide the lettuce between the four baguettes, add a layer of sliced tomatoes and cucumber then arrange the scampi on top.
- Drizzle the Cajun mayonnaise over the crispy scampi before serving.
