Tropical sunrise ice cream

    Ingredients

    Bird’s ice cream mix 200g
    Cold water 300ml
    Mango coulis 100ml
    Candied pineapple 20g
    Fresh passion fruits (seeded) 2
    Extra passion fruit to serve Optional

    Method

    1. Mix the Bird’s ice cream mix with the water and mango coulis, whisk for five minutes until correct consistency.
    2. Add the candied pineapple and passion fruit and fold in.
    3. Freeze in suitable containers.
    4. Serve with extra passion fruit if you wish.
