Ingredients
Bird’s ice cream mix | 200g |
Cold water | 300ml |
Mango coulis | 100ml |
Candied pineapple | 20g |
Fresh passion fruits (seeded) | 2 |
Extra passion fruit to serve | Optional |
Method

- Mix the Bird’s ice cream mix with the water and mango coulis, whisk for five minutes until correct consistency.
- Add the candied pineapple and passion fruit and fold in.
- Freeze in suitable containers.
