Ingredients
Red cabbage | 250g |
Red onions | 350g |
Lime | 1 |
Everyday Favourites cooking salt | 3g |
Orange juice | 20ml |
Coriander | 20g |
Avocado IQF slices | 150g |
Blue dragon sriracha | 100ml |
The Foodfellas 6" corn tortillas | 20 |
Blue dragon tofu box | 300g |
Tomatoes | 100g |
Method
- Mix the red cabbage, 250g red onion, half the lime juice, orange juice, salt and 15g of the corinader and leave to marinade for 2 hours.
- Finely chop the tomato, 100g of red onion, lime juice and salt to ame a salsa and set aside.
- Warm the corn tortillas.
- Place the cabbage mix onto the warmed tortilla.
- Cut the tofu into 15g chunks and dep fry in the batter.
- Place the tofu onto of the cabbage mix.
- Top with the tomato salsa and sliced avacado.
- Drizzle with Sirracha sauce.
