Ingredients
Chick peas in water (water only) | 40g |
Caster sugar | 20g |
Your choice of 3 Little Moons Ice Cream Mochi balls | |
Caramel syrup | 35ml |
Method
- Drain the chick peas and keep the water, weighing out the amount of water needed (use the drained chick peas in another recipe)
- Whisk the chick pea water on a high speed setting and add the sugar, until it forms stiff peaks and you have a vegan meringue
- Place 3 of the Little Moons into a serving dish
- Spoon over the meringue mixture and place under the grill under caramelized (or use a blow torch if you prefer)
- Drizzle over the caramel sauce
