St Pierre BBQ smokey beef brisket burger

Ingredients

For the beef brisket
Vegetable oil 2 tsp
Beef brisket joint 1.5kg
Large onion, chopped 1
Red pepper, chopped 1
Passata 400g
Everyday Favourites cumin 1 tbsp
Everyday Favourites smoked paprika 1 tbsp
Chipotle paste 1 tbsp
To assemble
Beef burgers 4
Cheddar cheese, slices 4
St Pierre Seeded Burger Buns 4
Everyday favourites mayonnaise 2 tbsp
Fresh chives, chopped 2 tsp
Gherkins, sliced
Pink pickled onions

  1. To cook the brisket yourself – preheat the oven to 160°C /140°C Fan / Gas Mark 3. If using a ready-made brisket, heat according to pack instructions and skip to step 4
  2. Heat a large, lidded oven-proof pan and add a little vegetable oil
  3. Add the brisket and brown all over then lift out onto a plate
  4. Add the onions to the same pan and cook for 5 – 7 minutes before adding the peppers, passata, ground cumin, smoked paprika, chipotle paste and season with salt and pepper
  5. Add the browned brisket back to the pan and cover with the lid. Slow cook in the oven for at least 3 hours or until the meat is very tender and easy to break apart with a fork
  6. Remove the meat to a plate and simmer the sauce for a few minutes to reduce a little
  7. Grill or fry the burgers until cooked then turn off the heat and add a slice of cheese to each. Leave in the pan for a minute or so to let the cheese melt a little.
  8. Meanwhile, grill the inside of the burger buns
  9. Mix the mayo with the chives and a good pinch of black pepper
  10. If making your own, shred the brisket meat and add back to the sauce. Spread the mayo over the base of the buns and add the cheese topped burger
  11. Top with a generous spoonful of the shredded brisket
  12. If you want add some sliced gherkins and pickled onions before popping on the lids and serving
