Ingredients
Pork loin boneless and rindless | 2kg |
Olive oil | 30ml |
Rosemary, chopped | 10g |
Sea salt | 8g |
Cooking apples, peeled, cored and cut into chunks | 1kg |
Light soft brown sugar | 100g |
Everyday Favourites ground nutmeg | 2g |
Everyday Favourites ground ginger | 2g |
Everyday Favourites ground cinnamon | 2g |
Brandy | 30ml |
Everyday Favourites unsalted butter, melted | 50g |
Method
- Place the pork onto a roasted tray and coat with oil, chopped rosemary and sea salt - Roast for 40 mins at 200ºc then reduce the temperature to 180ºc and continue to cook until golden brown and core temperature has been achieved.
- Place the apples onto a oven tray and coat with all other ingredients and then cover with melted butter - roast for 10-15 minutes until caramelized and golden.
- Once the pork has rested after cooking, serve with the apples and vegetables of choice - greens, mash or roasted potatoes work well.
