Roasted pork loin with spiced apples

Delicious and tender pork loin with autumn spiced apples

Ingredients

Pork loin boneless and rindless 2kg
Olive oil 30ml
Rosemary, chopped 10g
Sea salt 8g
Cooking apples, peeled, cored and cut into chunks 1kg
Light soft brown sugar 100g
Everyday Favourites ground nutmeg 2g
Everyday Favourites ground ginger 2g
Everyday Favourites ground cinnamon 2g
Brandy 30ml
Everyday Favourites unsalted butter, melted 50g

Method

  1. Place the pork onto a roasted tray and coat with oil, chopped rosemary and sea salt - Roast for 40 mins at 200ºc then reduce the temperature to 180ºc and continue to cook until golden brown and core temperature has been achieved.
  2. Place the apples onto a oven tray and coat with all other ingredients and then cover with melted butter - roast for 10-15 minutes until caramelized and golden.
  3. Once the pork has rested after cooking, serve with the apples and vegetables of choice - greens, mash or roasted potatoes work well.
