Ingredients
Jersey royal potatoes | 1.5kg |
Pure olive oil | 100ml |
Asparagus, bunch | 1 |
Everyday Favourites tarragon | 15g |
Banana shallots | 50g |
Everyday Favourites mayonnaise | 400ml |
Mixed heritage tomatoes | 500g |
Feta cheese | 200g |
Baby capers | 30g |
Extra virgin olive oil | 50ml |
Method
- Scrub and cut the potatoes in half, coat in oil and seasoning and roast.
- Prep the asparagus, coat in a little oil and season, chargrill.
- Chop the tarragon and finely dice the shallots then mix with the mayonnaise.
- Wedge the tomato and bring all the ingredients together in desired presentation, finish with extra virgin olive oil drizzle serve at room temp.
