Ingredients
Chargrilled chicken fillets | 2kg |
Everyday Favourites BBQ sauce | 300ml |
Hot mustard rarebit | 1kg |
Everyday Favourites unsalted butter | 100g |
Fajita seasoning | 20g |
Corn ribs | 1kg |
Gourmet Selection coated julienne fries | 1.2kg |
Pickled red onion, sliced | 200g |
Crispy fried onions | 100g |
Method
- Top the chicken with 10g of BBQ sauce then evenly top with rarebit mix and bake in a hot oven until golden and bubbling
- Mix the butter and seasoning together and melt, add to cooked sweetcorn ribs and keep warm - chargrill if desired to add that smoky finish.
- Cook the fries and then serve with the dish
- Top the cooked chicken with pickled pink onions and crispy onions
- Serve with a dip pot of BBQ sauce
