Ingredients
Everyday Favourites quinoa and vegetables mix | 2kg |
Everyday Favourites raw Scottish salmon portions (skinless) 140-170g | 10 |
Everyday Favourites sweet chilli sauce | 200ml |
Everyday Favourites extended life vegetable oil (BiB) | 30ml |
Lime juice fresh | 20ml |
Chopped corriander | 10g |
Chopped mint | 10g |
Method
Pre-prepared instructions - heat quinoa as per instructions for frying / defrost salmon / pre heat oven 180c
- Reheat the Quinoa & Vegetables - stri fry
- Sear the salmon in a very hot pan until slightly charred on the outside then place in pre heated oven for 12 mins
- Whisk the sweet chilli sauce , oil and lime juice until emulsified then add the chopped coriander & mint
- Serve the Quinoa in your desired bowl and top with the cooked salmon fillet
- Spoon over the dressing and serve with a fresh lime wedge - simple & quick
