Ingredients
Farmstead pork loin - boneless rindless | 4kg |
D’Autore mini chorizo barbecue | 300g |
Everyday Favourites grated mozzarella & mild Cheddar mix | 150g |
Whole piquillo peppers | 100g |
Maldon sea salt | 2g |
Everyday Favourites cracked black peppercorn | 5g |
Pure olive oil | 20ml |
Method
- Pre heat oven 180ºc. Split the loin of pork laterally and open up, then place cling film and batt out slightly until its all one thickness.
- Sprinkle the chopped chorizo, cheese & piquillo peppers across the whole surface then roll and tie with butchers string.
- Place the rolled pork loin onto a roasting tray and drizzle with oil, salt & pepper and place into the preheated oven and cook for about 1 1/2 hours or until cooked.
- Remove from the oven and allow to rest then carve and serve.
