Pear and Stilton salad

A delicious winter salad with crisp pear and Stilton cheese, finished with toasted walnuts and pecans in a zesty lemon

Ingredients

Sourdough ciabatta burger bun 2
Everyday Favourites walnut pieces 100g
Pecan nuts 100g
Conference pear, sliced 500g
Watercress 200g
Premium Selection Blue Stilton 500g
Cold pressed rapeseed oil 100ml
Dijon mustard 30g
Caster sugar 40g
Sea salt 3g
Everyday Favourites cracked black peppercorn 1g
Lemons, juiced 2

Method

  1. Dice the bread and bake until golden, toast the walnuts and pecans.
  2. Slice the pear and place into a bowl with watercress and crumbled Stilton.
  3. To make the dressing, add the oil, dijon, sugar, salt and black pepper. Add the juice from two lemons in a blender and combine together.
  4. Dress the leaf and salad and then mix in the walnuts/pecans and croutons.
