Method
A fun fusion of Mexican and Indian cuisine. ‘Pachos’ or poppadom nachos are something that we’ve seen on the London street food scene and loved the idea of. It’s a perfect way to layer textures with the bold flavours of Indian cuisine. We’ve used the dressings that can also be used on salads to allow you to sweat your assets. However you could make your own version using sauces like hot sauce, curry sauce or natural yogurt and toppings like pomegranate seeds, a crunchy Bombay mix and crushed samosa. The choice is yours.
- Cook the poppadoms as per instructions on pack.
- Cook the bhajis & pakoras as per the instructions. Once cooked pull apart slightly and keep warm.
- Place the cooked poppadoms in your desired tray then top with the bhajis and pakoras pieces.
- Drizzle over the three sauces and finish with chopped coriander if desired.
