Ingredients
Farmstead half gammon joint | 5kg |
Chopped peeled onions | 2 |
Chopped peeled carrots | 2 |
Everyday Favourites whole black peppercorn | 10 |
Everyday Favourites bay leaves | 2 |
Everyday Favourites English mustard | 50g |
Everyday Favourites thin cut orange marmalade | 300g |
Tate & Lyle light soft brown sugar | 180g |
Method
- Pre heat oven 180ºc. Soak the gammon joint overnight in cold water.
- Place the gammon in a large pan with the chopped onions, carrots, black peppercorn and bay leaves and cover with fresh water then place onto the heat and bring to the boil.
- Turn the heat down and simmer for 20 minutes per 500g - Approx. 3 hours - turning the gammon and topping up with water along the way.
- Remove the gammon from the water after the required cooking time and place onto an oven tray to cool slightly, remove the rind leaving the gammon whole then score into the fat.
- Cover with mustard and set to one side.
- In a small pan add the marmalade and brown sugar then place onto the heat and mix together until a sticky glaze has formed.
- Spread half of this over the gammon, reserving the other half for later.
- Place the gammon into the oven for 15-20 minutes basting with the remainder of the glaze.
- Once caramelised remove from the oven and serve either hot or cold.
