Ingredients
Cous cous | 100g |
Giant cous cous | 120g |
Carrots | 120g |
North African spice paste | 100g |
Oranges | 2 |
Fresh mint | 10g |
Olive oil | 80ml |
Dried raisins | 20g |
Red wine vinegar | 40ml |
Everyday Favourites pure Canadian maple syrup | 60g |
Pitted green olives | 30g |
Method
- Cook the cous cous as per instructions on pack and cool. Roast the carrots and set to one side.
- In a mixing bowl, add the paste, juice and zest from 1 orange, chopped mint and olive oil then whisk together.
- Pickle the raisins with red wine vinegar and maple syrup.
- Segment 1 orange and chop the olives, add this to the cooked cous cous
- Add the dressing to the cous cous and tumble together.
- Serve with pickled raisins and sliced roasted carrots.
