New York Bakery Co Philadelphia tomato bagel

Ingredients

Philadelphia original 30g
Cherry tomatoes, assorted colours 10
Olive oil 1 tsp
Everyday Favourites cracked black peppercorn to season
Fresh mint leaves (optional) 1-2 sprigs of
New York Bakery Co. wholemeal bagel 1
Baby leaf salad, to serve 1 handful
Olive oil, to serve 1 tsp
Fresh lemon, to serve 0.25

  1. Cut the cherry tomatoes in half and place in a small bowl. Toss with one teaspoon of olive oil, season to taste and then set aside until ready to use.
  2. Cut the bagel in half and spread both sides with Philadelphia. Next arrange the dressed cherry tomatoes on top, seasoning with black pepper and a small sprinkling of finely chopped mint. Serve immediately with a side of salad, quickly dressed in a teaspoon of olive oil and a squeeze of fresh lemon.
Tip This recipe is also tasty with Philadelphia Light.
