Finely shredded red cabbage | 25g |
Roast sweet potato | 30g |
Spinach leaves | 12g |
Sweetcorn kernels | 10g |
Grated carrot | 25g |
Coriander pesto | 35g |

- Smear a beetroot & chia wrap with the coriander pesto.
- Pile in the brightly coloured vegetables and roll up burrito style. Simple - delicious.
- 100g fresh coriander leaves and first inch of stalks
- 1 garlic clove
- A good pinch of sea salt
- 50g extra virgin olive oil
- 10g lime juice
- 24g walnuts or pecans – chopped
- Put all the ingredients into a food processor and blitz until smooth.
