Method
Freshly ground cinnamon, cardamom, ginger, clove and black pepper is infused with tea and milk to make this a truly warming palate tingle. Spiced milk tea is sold all over India by the chai wallahs (tea vendors). The name is sometimes shortened to just chai which is already recognisable on menus to British consumers as it grows in popularity – the masala is the aromatic warming spices that scent this sweet tea.
- Create the chai masala spice mix by grinding the whole cloves and green cardamom and mixing with the ground ginger, ground cinnamon and black pepper.
- Heat the water, milk, tea and the chai masala spice mix in a saucepan and bring to the boil.
- Once boiling reduce the heat to a simmer for a minute before straining through a fine sieve.
- Stir in the sugar and serve straight away.
