Masala beans tamarind bacon and egg

Ingredients

Chef William whole cloves 20g
Chef William whole green cardamom 18g
Everyday Favourites ground ginger 50g
Everyday Favourites ground cinnamon 25g
Everyday Favourites ground black pepper 16g
Everyday Favourites diced onions 200g
Everyday Favourites unsalted butter 60g
Chopped garlic in oil 10g
Green chilli 12g
Haricot beans 500g
Gustoso pizza topping sauce 800g
Fresh coriander 10g
Everyday Favourites cooking salt 6g
Everyday Favourites cracked black peppercorn 1g
Farmstead unsmoked rindless streaky bacon 20
Sweet Tamarind paste 100g
Greek style yoghurt 100g
Pre-poached eggs 10
Sourdough Naan 4" 10

Method

  1. Create the masala spice, grind the cloves, cardamom, removing cardamom husks, mix in the ground ginger, cinnamon and black pepper
  2. Heat a pan, add the onions and butter, cooked until golden and soft
  3. Add the garlic, chilli and spice mix and cook for 5 minutes, add the beans and tomato sauce, cook for 15 minutes
  4. Chop the coriander and add, season with salt and pepper and keep warm
  5. Heat the grill put the bacon on a tray and brush with tamarind, grill, turn over and brush again, keep basting till cooked and charred. Toast the naan
  6. Warm the poached eggs, divide the beans into serving bowls top with poached eggs, bacon and yoghurt, garnish with coriander and sliced green chilli if you like, serve with naan breads
