Ingredients
Coconut milk | 400ml |
Double cream | 250ml |
Caster Sugar | 80g |
Gelatine leaves | 3 x 2g |
Everyday Favourites vanilla pods | 2 |
Caster sugar | 300g |
Limes (whole) | 6 |
Water | 200ml |
Method
- Combine the milk, cream, caster sugar and vanilla pods in a pan and bring to a simmer - remove from the heat and leave to infuse for 35 minutes
- Strain the mixture into a clean pan making sure all the vanilla seeds are scraped from the pods and return to the heat
- Soak the gelatine as per instructions and add the cream mix - once dissolved pour the mixture into your desired serving dish and chill for 4-6 hours
- To make the syrup, add the caster sugar, lime juice and water to a pan and boil until a syrup has formed then add the grated lime zest and chill
- Serve the panna cotta with the syrup and some fresh berries & mint
