Kingfisher sardine pâté

Ingredients

Sardine pâté:
Kingfisher sardines in sunflower oil 2 cans
Drained sardines, large bones removed 120g
Everyday Favourites unsalted butter, softened 125g
Everyday Favourites luxury full fat soft cheese 125g
Lemon juice 3 tbsps
Everyday Favourites cracked black peppercorn to season
To garnish:
Tomato, sliced to garnish
Spring onion, chopped to garnish
Wholegrain bread, sliced for 8 people

  1. Purée the sardines, butter, soft cheese, and lemon juice in a food processor until almost smooth. Add pepper and more lemon juice to taste.
  2. Divide the sardine mixture among eight small ramekins (or put into one large bowl) and level the surface.
  3. Cover and chill in the refrigerator for a minimum of 30 minutes.
  4. Serve chilled on wholegrain bread, garnished with tomato and spring onion.
