Hot cross bun bread and butter pudding

Ingredients

Hot cross buns 700g
Butter 80g
Caster sugar 70g
Everyday Favourites free range medium eggs 6
Semi skimmed milk 700ml
Oranges 3
Milk chocolate 80g
Custard 1kg
Thin cut orange marmalade 100g
Icing sugar 50g

Method

  1. Take the hot cross bun, slice in half, melt the butter and spread on one side of the bun.
  2. Add the sugar, eggs, milk and the zest and juice of 3 oranges and whisk together.
  3. In an oven proof dish layer the hot cross bun and chocolate callets.
  4. Then pour the egg mix over the buns and bake for 45 - 50 minutes on 140°c.
  5. Heat the custard and mix through the 80ml of the Marmalade.
  6. Take out of oven when it has reached the correct core temperature of 75°c. Warm 20ml marmalade and glaze the top.
  7. Serve with a dusting of icing sugar and custard.
