Hake with tomato and olives

Ingredients

Panko white breadcrumbs 200g
Olive oil 80ml
Parsley 10g
Lemon 1
Multi use tomato base 1.5kg
Pitted black olives 120g
Baby capers 120g
Semi-dried tomatoes 120g
Hake supremes 10
Sea salt 5g

Method

  1. Blend together the panko, olive oil, parsley and zest from one lemon
  2. In a shallow oven tray add the sauce, olives, capers and tomatoes then top with the fish. Add the crumb mix to each fillet of hake and finish with salt
  3. Bake in a hot oven set to 190ºc and cook until the fish is cooked through and golden brown on the top
  4. serve with seasonal vegetables
