Ingredients
Panko white breadcrumbs | 200g |
Olive oil | 80ml |
Parsley | 10g |
Lemon | 1 |
Multi use tomato base | 1.5kg |
Casa De Mare pitted black olives | 120g |
Baby capers | 120g |
Casa De Mate semi-dried tomatoes | 120g |
Hake supremes | 10 |
Casa De Mare sea salt | 5g |
Method
- Blend together the panko, olive oil, parsley and zest from one lemon
- In a shallow oven tray add the sauce, olives, capers and tomatoes then top with the fish. Add the crumb mix to each fillet of hake and finish with salt
- Bake in a hot oven set to 190ºc and cook until the fish is cooked through and golden brown on the top
- serve with seasonal vegetables
