Method
Method:
- Cajun remoulade - Place the Cajun spice in a dry frying pan and lightly toast till well heated through. Mix together the mayo, horseradish, half the Cajun spice, minced garlic, mustard, lemon juice, hot sauce, and Worcestershire sauce.
- Slice the tomatoes, prep the leaves and mix.
- Bake the baguette.
- Deep fry the scampi and the fries, toss in the remaining Cajun spice.
- Cut the baguette in half, then slice the baguette lengthways ready to fill. Spread oven the Cajun remoulade. Build with the sliced tomatoes, lettuce and scampi.
- Serve with the sweet potato fries.
