Ingredients
Shallots | 120g |
Granny smith apple | 4 |
Everyday Favourites unsalted butter | 80g |
Cider | 500ml |
Vegetable bouillon | 60g |
Double cream | 400ml |
Sage, chopped | 4g |
Caster sugar | 100g |
Cooking apple, sliced | 500g |
Farmstead gammon steak | 1 |
Method
- Peel and slice the shallots.
- Peel and finely dice the green apples.
- Heat the butter in a large pan and add the shallots and diced apples, cook until soft then add the cider and reduce by half.
- Add the stock and cream and cook for a further 10 minutes on a low heat, blend until smooth. Then add the chopped sage (set to one side to keep warm).
- In a large frying pan add some butter and sugar and caramelize the sliced cooking apples until golden.
- Serve the gammon with the apples and cider sauce, add if desired mash potato or maple coated carrots.
