Ingredients
Dry roasted peanuts | 20g |
Sea salt | 5g |
Vegetable oil | 10ml |
Ground cinnamon | 1g |
Cumin seeds | 3g |
Cherry tomato (on the vine, chilled) | 300g |
Coriander | 20g |
Cucumber (35-40mm, chilled) | 1 |
Garlic (pre packed, chilled) | 6g |
Green chillies (chilled) | 10g |
Limes (chiled) | 2 |
Mango (chilled) | 2 |
Red onion (chilled) | 20g |
Method
- Toss together the sliced cucumber, diced onion, salt and garlic in a colander. Let it stand for 20 minutes to drain.
- Meanwhile, in a large bowl, mix together the peanut oil, diced and seeded tomato, chopped chilli, cumin, cinnamon and diced mango.
- Add the cucumber mixture to the bowl and toss all of the ingredients together.
- Finally, garnish the salad with a small handful of peanuts, chopped coriander and fresh lime juice.
