Double baked chocolate and flake cheesecake

Ingredients

Digestive biscuits 130g
Golden syrup 130g
Unsalted butter 25g
White chocolate 130g
Dark chocolate 100g
Cream cheese 330g
Cornflower 20g
Free range medium egg 1
Whipping cream 170ml
Cadbury flake pieces 100g

Method

  1. Blend the biscuits down to make a crumb then melt the butter and syrup and mix with the biscuits
  2. Place the mixture into the base of a baking tin and press the mixture firmly down
  3. Melt the white chocolate and dark chocolate separately in bowls
  4. Blend the cheese, sugar, cornflour and the cream together, then split the mixture into two and fold through both bowls of chocolate along with the Cadburys flakes
  5. Pour both mixtures side by side into the tin then using a skewer swirl together
  6. Bake at 160° for 35 - 40 mins ensuring the core temperature reaches 75° then allow to cool and set before serving.
