Extra-virgin olive oil | 3 tbsp |
Balsamic vinegar | 1 tbsp |
Dijon mustard | 1 tsp |
Honey | 1 tsp |

- In a large salad bowl, combine the mixed salad greens, slice Peppadew bites, red onion, sliced parmesan cheese and eggs.
- In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, salt and pepper to make the dressing.
- Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.
