Ingredients
Medium Eggs | 1 |
Kalos Feta Cheese | 60g |
Orexis Beetroot Tzatziki | 5g |
Sea Salt | 5g |
Cracked Black Peppercorn | 5g |
Self Raising Flour | 100g |
Fresh Coriander | 10g |
Courgette | 250g |
Fresh Mint | 20g |
White Onion | 25g |
Method
- Grate the courgette, drain and salt leave for 15 to 30 minutes. Then gently squeeze to remove as much water as possible. Peel and finely slice the onion, crumble the feta and chop the mint.
- Combine the eggs, onion, mint, feta, courgette and seasoning, then add the flour to make a soft dough.
- Pre heat a fryer to 180c. Depending on whether you wish to form the mixture as a ball or fritter shape, form accordingly and drop a tablespoon of the dough into the fryer, then cook for 2-3 minutes or until golden brown.
- Serve with the chopped coriander and the tzatziki.
