Ingredients
Wholemeal flour | 200g |
Reduced fat cocoa powder | 35g |
Medium fresh eggs | 2 |
Whole milk | 500ml |
Courgette (green) | 150g |
Dark pitted cherries | 850g |
Canadian maple syrup | 30g |
Method
- Finely grate the courgette and squeeze all the moisture out of it. Pre-make the compote by combining the cherries and maple syrup together. Simmer until it’s reduced and slightly sticky
- In a mixing bowl, add the flour and cocoa powder and then whisk in the eggs and milk. Stir in the courgette you prepared earlier too
- Heat a frying pan and wipe out with a little oil. Ladle in the batter and cook the pancakes. Serve them with the cherry compote and ice cream if desired
