Ingredients
Cauliflower, trimmed | 8 |
Habanero hot sauce | 300ml |
Mango, diced | 1 |
Red capsicum peppers, diced | 3 |
Red onion, diced | 150g |
Jalapeño peppers, sliced | 10g |
Lime, juiced | 1 |
Coriander | 10g |
Tacos | 1 |
Red cabbage | 1 |
Ripe avocado, sliced | 1 |
Method
- In a large bowl, stir the cauliflower florets with the habanero sauce. Place on a large baking tray and cook in the oven until edges start to crisp, tossing half way through.
- For the mango salsa, simply dice the mango, peppers, onions and chilli and combine with the lime juice and coriander, season to taste and set aside until needed.
- Warm the tacos and simply place on your serving dish, top with fresh chopped cabbage, a couple of avocado slices and the marinated cauliflower. Finish with a few spoonfuls of the mango salsa.
