Ingredients
Cooking and baking spread | 200g |
Caster sugar | 200g |
Free range medium egg | 4 |
Vanilla extract | 10ml |
Cocoa powder | 80g |
Self raising flour | 170g |
Icing sugar | 600g |
Unsalted packet butter | 300g |
Method
- Pre heat oven to 180 degrees, then in a bowl beat the phase and caster sugar together until light and fluffy
- Then add the eggs and beat well add the essence and continue to get then mix in 30 cocoa powder and flour and continue to whisk until light and fluffy
- Spoon into muffin cases and then place in muffin tins and bake for 12 minutes or until golden and cooked in the middle
- Allow to cool, while cooling beat the butter and icing sugar until light and fluffy then add 50g cocoa powder and mix well, Zest 1 orange and add to the butter cream and mix well
- Once sponge is cooled pipe the butter cream on top and garnish with flake
