Butternut Squash traybake with halloumi and oregano

Ingredients

Butternut squash 2
Red onions 500g
Olive oil 30ml
Sea salt 4g
Everyday Favourites clear blossom honey 30g
Everyday Favourites dry oregano 5g
Garlic, peeled and chopped 10g
Rosemary, chopped 4g
Red chillis, diced 10g
Halloumi 500g

Method

  1. Peel and chop the butternut squash into even size chunks and do the same with the red onions
  2. Mix together in a bowl and add all the other ingredients apart from the halloumi, then roast until tender and golden
  3. Pan fry the halloumi or chargrill if preferred and add to the warm salad
  4. Serve as a starter or main course as desired
