Ingredients
Everyday Favourites eggs | 4 |
Spring onions | 4 (each) |
Red peppers | 1 (each) |
Everyday Favourites hi-life vegetable oil | 20ml |
Everyday Favourites salted butter | 20g |
Mint | 20g |
Coriander | 20g |
Asian garlic and chilli sauce | 40ml |
Limes | 1 |
Method
- Heat a large frying pan and add the oil and butter
- Sauté half the spring onions (reserve the rest for garnish) then add the red pepper slices
- Whisk the eggs with the herbs and lime zest and cook in the oil and butter
- Once cooked fold and place on a warmed plate, cut a slit down the top and sprinkle with the remaining spring onions
- Drizzle with the sauce and garnish with sprigs of mint, coriander and a lime wedge
