Ingredients
Everyday Favourites hi-life vegetable oil - tub | 20ml |
Everyday Favourites salted butter | 20g |
Spring onions | 4 |
Red Pepper | 1 |
Everyday Favourites eggs | 4 |
Mint | 20g |
Coriander | 20g |
Lime (whole) | 1 |
Asian garlic & chilli sauce | 40ml |
Method
- Heat a large frying pan and add the oil and butter
- Sauté half the spring onions (reserve the rest for garnish) then add the red pepper slices
- Whisk the eggs with herbs and lime zest and cook in the oil & butter
- Once cooked fold and place on a warmed plate. Cut a slit down the top and sprinkle with the remaining spring onions
- Drizzle with the sauce and garnish with sprigs of mint, coriander and a lime wedge
