Ingredients
Alpen original or no added sugar | 125g |
Chopped nuts | 40g |
Nut butter of your choice | 125g |
Grated apple or grated carrot | 1 |
Medjool dates (or 60g soft dried dates), chopped | 4 |
Method

- Preheat oven to 180°c.
- Spread Alpen evenly onto a baking tray.
- On another baking tray, evenly spread out the chopped nuts.
- Toast both in the oven for 5-7 mins, then leave to cool.
- In a large mixing bowl, stir together the nut butter, grated apple/carrot and chopped dates.
- Stir in the Alpen and make sure it's mixed together well.
- Divide the mixture into 15 servings, rolling each into a ball. Roll the balls in the toasted nuts to coat.
- Allow to cool for 30 minutes.
